After our recent trip to South Carolina, I had to try to recreate a Southern Style Tomato Pie we had down there. Found this recipe, made two pies (double the ingredients for two pies; also, I didn’t feel like peeling tomatoes, so didn’t, and I skipped the bacon crumbled on top (I know - blasphemy to some)). Came out great, and it’s so easy. If you’ve got extra tomatoes to use up at the end of summer, this is one tasty way to do it.
